A rich vanilla cheesecake made with two pounds of cream cheese and swirled with a lightly spiced pumpkin cheesecake mixture. The pumpkin is blended with a portion of the cream cheese filling before being dolloped and marbled throughout, rather than added as a separate pumpkin layer.

Let's make it
Method
Prepare the oven and pan
5 minutes (estimate)Preheat the oven to 325°F (approximately 163°C). Prepare a 9-inch springform pan.
Make the graham cracker crust
10 minutes (estimate)Combine 150 g, melted 71 g, 25 g, 1.3 g, and 1 pinch. Mix until evenly moistened. Press firmly into the bottom of the springform pan.
Prebake the crust
10 minutesBake the crust at 325°F for approximately 10 minutes. Remove from the oven and allow it to cool while preparing the filling. This is the recommended method from the conversation, not a verified result.
Beat the cream cheese and sugar
5 minutes (estimate)Beat softened 907 g with 200 g until smooth and creamy, scraping down the bowl as needed.
Finish the cheesecake filling
5 minutes (estimate)Mix in 115 g, 10 mL, 1.5 g, and optional 16 g. Add 5 large eggs one at a time, mixing on low speed just until incorporated. Avoid incorporating excessive air.
Prepare the pumpkin cheesecake swirl
5 minutes (estimate)Transfer 240–360 mL from the prepared filling into a separate bowl. Stir in 213 g, 2.6 g, 1 g, 0.5 g, and optional 0.3 g until evenly blended. The pumpkin should be mixed with cheesecake filling rather than used alone.
Assemble the cheesecake
5 minutes (estimate)Pour the remaining plain cheesecake filling over the cooled crust. Dollop the pumpkin cheesecake mixture across the top in several generous spoonfuls. Use a butter knife or skewer to gently swirl the mixtures together in figure-eight motions. Avoid completely blending the colors; preserve distinct pumpkin ribbons.
Bake the cheesecake
65–80 minutes (recommended range)Bake at 325°F for approximately 65–80 minutes. Watch for the outer 2–3 inches to become set while the center retains a slight wobble when the pan is gently shaken. The previously suggested center-temperature target was approximately 150°F (66°C). The baking time and temperature target were recommendations, not recorded test results.
Cool gradually
45–60 minutes in oven, plus room-temperature coolingTurn off the oven, crack the door, and leave the cheesecake inside for approximately 45–60 minutes. Remove and allow it to cool to room temperature.
Chill and serve
At least 6 hours; overnight preferredRefrigerate the cooled cheesecake for at least 6 hours, preferably overnight. Carefully remove the springform ring and slice to make 12 slices.

Original preparation method
The cook described a previous pumpkin cheesecake using four blocks of cream cheese and approximately half a can of pumpkin puree. The pumpkin was mixed with a portion of the cream cheese filling before being dolloped into the cheesecake and swirled. This method is the central feature to preserve.
Previously made, but results undocumented
The cook said this cheesecake had been made recently, but did not provide a baking temperature, actual bake duration, final internal temperature, tasting feedback, or details of the finished texture in this conversation. Do not mark the present instructions as fully tested.
Pumpkin proportion
Using approximately half a 15-ounce can of pumpkin puree was the cook's stated preference. The prior assistant suggested this would avoid making the cheesecake too wet, but that outcome was not verified.
Pumpkin mixture rather than pumpkin layer
The pumpkin should be blended into some of the finished cream cheese batter before swirling. Do not substitute a solid pumpkin layer or swirl plain pumpkin puree directly into the cheesecake.
Suggested flavor separation
The prior assistant recommended leaving the main cheesecake filling vanilla-flavored and concentrating the spices in the pumpkin mixture to create more flavor contrast. This was a suggestion, not a tested modification.
Optional flour
Two tablespoons of flour were suggested to help stabilize the filling, but there is no evidence that the cook used flour in the prior cheesecake.
Suggested texture and handling
The prior instructions advised mixing eggs gently, avoiding overbaking, using slight center wobble as a doneness indicator, and cooling gradually. These were recommendations, not observations from a documented bake.
Equipment and baking method
A 9-inch springform pan and a 325°F oven were recommended. No water bath was specified, and there is no confirmation of the exact pan or method used previously.
Yield
Twelve slices is a practical assumed yield from the recommended 9-inch cheesecake, not a recorded number of servings.
Measurement conversions
The original ingredient quantities were mostly in US volume units. Metric weights for crumbs, spices, sour cream, and similar ingredients are approximate conversions for site usability, not weights measured during preparation.
